Black Pudding Croquettes Recipe.


Ingredients:


200g black pudding, finely chopped
2 medium potatoes, boiled and mashed
50g flour
2 eggs, beaten
100g breadcrumbs
Vegetable oil, for frying
Salt and pepper, to taste


Recipe Instructions:


In a bowl, mix mashed potatoes and black pudding. Season with salt and pepper.
Shape into small croquettes.
Coat each croquette first in flour, then dip in beaten egg, then roll in breadcrumbs.
Heat oil in a deep fryer or large pot to 180°C (350°F).
Fry croquettes until golden and crispy, about 3-4 minutes.
Drain on paper towels and serve hot with dipping sauce.
