Japanese Onigri Recipe.

Ingredients:

2 cups sushi rice (short-grain Japanese rice)
2 1/2 cups water
2 tablespoons rice vinegar
1 tablespoon sugar
1 teaspoon salt
Fillings of your choice (e.g., cooked salmon, tuna salad, pickled plum, grilled chicken, cooked vegetables, etc.)
Nori seaweed sheets, cut into thin strips (optional, for wrapping)

Recipe Instructions:

Prepare the Rice:

Rinse the sushi rice in a fine-mesh sieve under cold water until the water runs clear. This removes excess starch.
In a medium saucepan, combine the rinsed rice and water. Let it soak for 30 minutes.
After soaking, bring the rice to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes. Then, remove the pot from the heat and let it sit, covered, for another 10 minutes to steam.
In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved.
Transfer the cooked rice to a large mixing bowl and gently fold in the vinegar mixture until well combined. Let the rice cool slightly.

Prepare the Fillings:

While the rice is cooling, prepare your desired fillings. This could include cooked salmon, tuna salad, pickled plum, grilled chicken, cooked vegetables, or any other filling of your choice. Make sure the fillings are cooled to room temperature.

Shape the Onigiri:

Wet your hands lightly with water to prevent the rice from sticking. Scoop about 1/2 cup of cooked rice into your palm.
Make an indentation in the center of the rice and place a small amount of your chosen filling into the indentation.
Fold the rice over the filling to enclose it completely, shaping it into a triangular or oval rice ball. Press firmly to compact the rice and ensure it holds its shape.

Wrap with Nori (Optional):

If desired, wrap the completed onigiri with strips of nori seaweed. This adds flavor and makes it easier to handle.
To wrap, cut a nori sheet into thin strips and wrap them around the base or sides of the onigiri. Moisten the ends of the nori strips with a little water to help them stick.

Serve or Store:

Serve the onigiri immediately, or pack them in a bento box or wrapped in plastic wrap for later enjoyment. Onigiri are traditionally enjoyed at room temperature.

Enjoy your homemade onigiri as a delicious and convenient snack or light meal.
