Butternut Squash and Black Bean Tacos Recipe.


Ingredients:


2 cups diced butternut squash
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon cumin
Salt and pepper to taste
1 cup canned black beans, drained and rinsed
8 small corn or flour tortillas
Toppings: shredded lettuce, diced tomatoes, sliced avocado, salsa, chopped cilantro, lime wedges


Recipe Instructions:


Preheat your air fryer to 375°F (190°C).
In a bowl, toss diced butternut squash with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
Place the seasoned butternut squash in the air fryer basket.
Air fry for 15-20 minutes, shaking the basket halfway through, until the squash is tender and lightly browned.
Warm the tortillas in the air fryer for a few seconds, if desired.
Assemble the tacos by filling each tortilla with roasted butternut squash, black beans, and desired toppings.
Serve hot with lime wedges on the side.
