Pimm's Trifle Recipe.


Ingredients:


1 package of sponge cake or pound cake, sliced
1/2 cup Pimm's No. 1
1/4 cup orange juice
1/4 cup lemon juice
2 cups strawberries, sliced
2 cups cucumber, diced
1 cup mint leaves, chopped
2 cups vanilla custard (store-bought or homemade)
2 cups whipped cream
Additional strawberries, cucumber slices, and mint leaves for garnish


Recipe Instructions:


Prepare the Cake Layer:

Arrange the slices of sponge cake or pound cake at the bottom of a trifle dish or individual serving glasses.

Prepare the Pimm's Mixture:

In a bowl, mix together the Pimm's No. 1, orange juice, and lemon juice.

Prepare the Fruit Layer:

In another bowl, combine the sliced strawberries, diced cucumber, and chopped mint leaves.
Pour the Pimm's mixture over the fruit mixture and gently toss to coat the fruit. Let it macerate for about 15-20 minutes.

Assemble the Trifle:

Once the fruit has macerated, spoon half of the fruit mixture over the cake layer in the trifle dish or glasses.
Next, spread half of the vanilla custard over the fruit layer.
Repeat the layers with the remaining cake, fruit mixture, and custard.

Top with Whipped Cream:

Spread the whipped cream evenly over the top of the trifle.
Garnish:

Decorate the top of the trifle with additional sliced strawberries, cucumber slices, and mint leaves for a fresh and colorful garnish.

Chill:

Cover the trifle with plastic wrap and refrigerate for at least 2 hours, or until chilled and set.
