Italian Sausage and Bean Cottage Pie Recipe.


Ingredients:


For the Filling:

500g Italian sausage, casings removed
1 onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
1 red bell pepper, diced
1 can (400g) diced tomatoes
1 can (400g) cannellini beans, drained and rinsed
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Olive oil for cooking

For the Mashed Potato Topping:

1 kg potatoes, peeled and diced
1/2 cup milk
4 tablespoons unsalted butter
Salt and pepper to taste
1/2 cup grated Parmesan cheese (optional)


Recipe Instructions:


Prepare the Filling:

Heat a tablespoon of olive oil in a large skillet over medium heat.
Add the Italian sausage to the skillet, breaking it up with a wooden spoon, and cook until browned and cooked through.
Add the chopped onion, minced garlic, diced carrots, and red bell pepper to the skillet. Cook until the vegetables are softened, about 5-7 minutes.
Stir in the diced tomatoes, cannellini beans, dried oregano, and dried basil. Season with salt and pepper to taste. Simmer for 10-15 minutes until the flavors meld together and the mixture thickens slightly. Remove from heat and set aside.

Prepare the Mashed Potato Topping:

Place the peeled and diced potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Add the milk and unsalted butter to the pot with the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Stir in grated Parmesan cheese if desired.

Assemble the Cottage Pie:

Preheat the oven to 200°C (400°F).
Transfer the Italian sausage and bean mixture to a baking dish, spreading it out evenly.
Spoon the mashed potato mixture over the top of the sausage and bean filling, spreading it out to cover the filling completely.

Bake the Cottage Pie:

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the mashed potato topping is golden brown and the filling is bubbly.

Serve:

Remove the Italian Sausage and Bean Cottage Pie from the oven and let it cool for a few minutes before serving.
