Venison Sausage and Polenta Recipe.


Ingredients:


For the Venison Sausage:

500g ground venison
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried sage
1/2 teaspoon crushed red pepper flakes (optional)
2 cloves garlic, minced
2 tablespoons olive oil (for cooking)

For the Polenta:

1 cup polenta (cornmeal)
4 cups water or chicken broth
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter
Salt and pepper to taste

For Garnish:

Fresh parsley, chopped
Grated Parmesan cheese


Recipe Instructions:


Prepare the Venison Sausage:

In a mixing bowl, combine the ground venison with salt, black pepper, dried thyme, dried sage, crushed red pepper flakes (if using), and minced garlic. Mix until well combined.
Form the seasoned venison mixture into small sausage shapes or patties.
Heat olive oil in a skillet over medium heat. Add the venison sausages/patties and cook until browned and cooked through, about 5-6 minutes per side. Remove from heat and set aside.

Prepare the Polenta:

In a medium saucepan, bring water or chicken broth to a boil.
Gradually whisk in the polenta, stirring constantly to prevent lumps from forming.
Reduce the heat to low and continue cooking the polenta, stirring frequently, for about 20-25 minutes, or until thickened and creamy.
Stir in grated Parmesan cheese and unsalted butter until melted and well incorporated.
Season with salt and pepper to taste.

Serve:

Spoon the creamy polenta onto serving plates or bowls.
Arrange the cooked venison sausages/patties on top of the polenta.
Garnish with chopped fresh parsley and additional grated Parmesan cheese, if desired.
