Lancashire Hotpot Recipe.


Ingredients:


2 pounds lamb or beef stew meat, cut into bite-sized pieces
2 tablespoons all-purpose flour
Salt and pepper to taste
2 tablespoons vegetable oil
2 onions, thinly sliced
2 carrots, peeled and thinly sliced
2 cloves of garlic, minced
4 medium potatoes, peeled and thinly sliced
2 cups beef or vegetable broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
2 sprigs of fresh thyme (or 1 teaspoon dried thyme)
1 bay leaf
Chopped fresh parsley (for garnish)


Recipe Instructions:


Preheat the Oven:

Preheat your oven to 325°F (160°C).

Coat the Meat:

In a bowl, combine the flour, salt, and pepper.
Toss the lamb or beef pieces in the seasoned flour mixture, coating them evenly.

Brown the Meat:

Heat the vegetable oil in a large, oven-safe pot or Dutch oven over medium-high heat.
Add the coated meat to the pot and cook until it is browned on all sides. Work in batches to avoid overcrowding the pot.
Remove the browned meat from the pot and set it aside.

Sauté the Onions, Carrots, and Garlic:

In the same pot, add the sliced onions, carrots, and minced garlic.
Sauté until the onions are softened and translucent, about 5 minutes.

Layer the Ingredients:

Arrange the browned meat on top of the sautéed onions, carrots, and garlic in the pot.
Layer the sliced potatoes on top of the meat, overlapping them slightly.
Prepare the Sauce:

In a separate bowl, whisk together the beef or vegetable broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper.
Pour the sauce over the layered ingredients in the pot.
Add the bay leaf to the pot.

Cook the Hotpot:

Cover the pot with a lid and place it in the preheated oven.
Let the hotpot cook for 2 to 2 ½ hours, or until the meat is tender and the flavors have melded together.

Serve and Garnish:

Remove the hotpot from the oven and discard the bay leaf.
Sprinkle the hotpot with chopped fresh parsley for a burst of freshness and color.
Serve the Lancashire Hotpot directly from the pot, spooning the meat, vegetables, and flavorful sauce into individual bowls.
