Traditional Shepherd's Pie Recipe.

Ingredients:

For the Filling:

1 tablespoon vegetable oil
1 onion, finely chopped
2 carrots, diced
2 cloves of garlic, minced
1.5 pounds ground lamb or beef
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup beef or vegetable broth
1 teaspoon dried thyme
Salt and pepper to taste
1 cup frozen peas

For the Mashed Potato Topping:

2 pounds potatoes, peeled and cut into chunks
4 tablespoons unsalted butter
½ cup milk (or more as needed)
Salt and pepper to taste
½ cup grated cheddar cheese (optional)

Recipe Instructions:

Prepare the Filling:

Heat the vegetable oil in a large skillet or frying pan over medium heat.
Add the chopped onion and diced carrots to the pan and cook for about 5 minutes until softened.
Add the minced garlic and ground lamb or beef to the pan, breaking up the meat with a spoon or spatula. Cook until browned and cooked through.
Stir in the tomato paste, Worcestershire sauce, beef or vegetable broth, dried thyme, salt, and pepper. Allow the mixture to simmer for about 10 minutes.
Add the frozen peas to the pan and cook for an additional 2-3 minutes. Remove from heat and set aside.

Prepare the Mashed Potato Topping:

Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.
Bring the water to a boil and cook the potatoes until they are tender when pierced with a fork, usually around 15-20 minutes.
Drain the potatoes and return them to the pot. Add the butter and milk to the pot.
Using a potato masher or an electric mixer, mash the potatoes until smooth and creamy. Add more milk if needed to achieve the desired consistency.
Season with salt and pepper to taste.

Assemble and Bake:

Preheat your oven to 375°F (190°C).
Transfer the prepared filling to a deep oven-safe dish or individual ramekins, spreading it evenly.
Spoon the mashed potatoes over the filling, smoothing the top with a spatula.
If desired, sprinkle grated cheddar cheese over the mashed potatoes for an extra touch of flavor.
Place the dish or ramekins on a baking sheet to catch any potential spills and bake in the preheated oven for 25-30 minutes or until the top is golden and the filling is bubbly.
Remove from the oven and let it cool for a few minutes before serving.

Serve and Enjoy:

Scoop generous portions of the Shepherd's Pie onto plates, making sure to include both the flavorful meat filling and creamy mashed potato topping.
Pair with your favorite vegetable side dish, such as steamed greens or roasted root vegetables.
