Salmon and Quinoa Salad Recipe.


Ingredients:


For the salmon:

2 salmon fillets
1 tablespoon of olive oil
1 teaspoon of lemon zest
1/2 teaspoon of dried dill
Salt and pepper to taste
For the salad:

2 cups of cooked quinoa
2 cups of mixed salad greens
1/2 cucumber, sliced
1/2 cup of cherry tomatoes, halved
1/4 cup of sliced red onion
2 tablespoons of chopped fresh dill
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
Salt and pepper to taste


Recipe Instructions:


Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper.
In a small bowl, combine the olive oil, lemon zest, dried dill, salt, and pepper.
Brush the mixture over the salmon fillets, ensuring they are evenly coated.
Bake the salmon in the preheated oven for 12-15 minutes or until cooked through and flaky.
Remove the salmon from the oven and let it cool slightly.
In a large bowl, combine the cooked quinoa, mixed salad greens, cucumber slices, cherry tomatoes, sliced red onion, and chopped fresh dill.
In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to create the dressing.
Drizzle the dressing over the salad and toss gently to coat.
Break the salmon into chunks and add it to the salad.
Gently toss everything together and serve a vibrant and nutritious salmon and quinoa salad.
