Spanish Rice Recipe.


Ingredients:


2 TBSP Olive Oil
1 Red Bell Pepper (Finely Diced)
1/4 Red Onion (Finely Diced)
2 Cups Long Grain White Rice (Rinsed)
2 Cups Vegetable Broth (Low Sodium)
1 Cup Tomato Sauce
1 TSP Garlic Powder
1 TSP Chili Powder
1 TSP Dried Oregano
1/2 TSP Ground Cumin
1/2 Lemon (Juiced)
Pinch of Salt
Pinch of Ground Black Pepper
1 TBSP Fresh Cilantro (Chopped)


Recipe Instructions:


In a medium pan, heat the oil over medium heat and once it begins to shimmer, add the bell pepper and onion, saut? For 5 minutes until the onion turns translucent and tender.
Add the rice and continue to saut? For another 5 minutes or until it turns light and golden.
Next, add the remaining ingredients, except for the cilantro and mix to combine well.
Bring the rice mixture to a rolling boil and cover, reducing the heat to low and simmer the rice for 15 minutes or until all of the liquid has been absorbed and the rice is tender.
Turn the heat off and remove pan from the heat and allow to sit for 4 minutes before removing the lid, fluffing the rice and garnishing with the chopped cilantro.
Serve warm.
