Muffuletta Sandwich Recipe.


Ingredients:


For the olive tapenade

1 Cup Green Olives (Chopped)
1 Cup Pickled Peppers (Chopped)
1/2 Cup Roasted Red Bell Pepper (Chopped)
1 Shallot (Minced)
2 TBSP Capers
3 Cloves of Garlic (Minced)
1/4 Cup Olive Oil
2 TBSP Red Wine Vinegar
1/2 TSP Dried Basil
1/2 TSP Dried Oregano
Pinch of Salt
Pinch of Ground Black Pepper

For the Muffuletta Sandwich

1 (10") Load of Round Italian Bread (Or Muffuletta Bread)
1/2 LB Thinly Sliced Capicola
1/2 LB Thinly Sliced Mortadella
1/2 LB Thinly Sliced Salami
1/2 LB Sliced Provolone Cheese


Recipe Instructions:


In a medium glass bowl, add the olives, pickled peppers, red bell pepper, shallot, garlic, olive oil, vinegar, basil and oregano until well combined, season with salt and pepper, set aside in refrigerator.
Slice the bread in half and scoop out a little of the inside to make room for the tapenade.
With the inside of the bread facing upwards, spread the tapenade mixture over both slices.
Once spread with the tapenade, layer a slice of capicola, followed by mortadella, salami and provolone cheese on the tapenade, place the second slice of bread back on top of the meats and cheese.
Wrap the entire sandwich in plastic wrap, place a cast iron pan on top to lightly press the sandwich and leave for at least 1 hour (overnight if possible) to allow the flavors to soak into the bread.
After the sandwich has sat, unwrap and place in an oven that has been preheated to 375 degrees for 20 minutes to heat through.
Remove from the oven, slice into 8 triangles and serve immediately.
