Keto Chicken Parmesan Recipe.


Ingredients:


4 Chicken Breasts
1 Cup Passata
1 Cup Roma Tomatoes (Diced)
1 Cup Mozzarella Cheese (Shredded)
1/2 Cup Parmigiano-Reggiano (Grated)
3 TBSP Olive Oil
1 Clove Garlic (Minced)
1 TSP Dried Oregano
1 TSP Dried Thyme
1 TSP Smoked Paprika
Pinch of Salt
Pinch of Pepper


Recipe Instructions:


Preheat oven to 400 degrees.
Place a skillet on high heat and add 1 TBSP of olive oil, once oil is hot, sear the chicken breasts for 3-4 minutes per side or until they begin to turn golden brown.
Transfer the chicken breasts to a baking sheet lined with parchment paper.
In a medium pan over medium heat, add the passata, diced tomatoes and olive oil.
Stir to combine and add the minced garlic, salt and pepper and taste the sauce, adjust seasoning if needed.
Scoop one TBSP of the tomato sauce on top of each chicken breast, sprinkle with some of the shredded mozzarella and a dash of Italian seasoning or dry herbs.
Bake in the preheated oven for 15-20 minutes or until the cheese has melted and has begun to turn golden brown and bubble.
Remove from the oven and allow to cool for 5 minutes before serving.
