Avocado Breakfast Bowl Recipe.


Ingredients:


1 Avocado (Halved and Pitted)
1 TBSP Butter
3 Large Eggs
3 Slices of Bacon (Cut into Small Pieces)
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


Scoop out the flesh of the avocado halves and place the meat into a small glass bowl, set aside.
Heat a small skillet over medium heat with 1 TBSP of butter until melted, add the bacon on one side and the beat the 3 eggs while bacon is cooking.
Once bacon is cooked, add the 3 beaten eggs to the skillet and mix into the cooked bacon, cook for 2-3 minutes.
Once the eggs have started to firm up, add the avocado flesh that was removed and stir quickly to mix.
Remove the skillet from the heat and spoon the egg, bacon and avocado mixture into the avocado halves.
Season as required with salt and pepper and enjoy while hot.
